Mushroom Spinach Frittata
Looking for a hearty and flavorful dish? This Mushroom Spinach Frittata is packed with savory goodness, making it perfect for breakfast, brunch, or even a light dinner. Easy to whip up, yet sure to impress!
Ingredients
3 tablespoons butter
½ small onion, chopped
Approximately 5 baby portabella mushrooms, sliced
3 ounces fresh organic spinach
1 cup shredded sharp cheddar cheese
6 farm-fresh eggs
¼ teaspoon sea salt
Freshly ground pepper, to taste
¼ cup milk
½ teaspoon herbs de Provence
Instructions
Step 1: Prep and Preheat
Preheat your oven to 375°F (190°C).
Step 2: Sauté the Veggies
Melt the butter in a cast iron pan over medium heat.
Toss in the chopped onion and sliced mushrooms. Sauté for about 4-5 minutes, or until they soften and release their natural flavors.
Add the fresh spinach to the pan and cook until just wilted. Remove from heat and set aside.
Step 3: Whisk the Eggs
In a large bowl, crack the eggs and whisk them together with the sea salt, freshly ground pepper, milk, and herbs de Provence.
Stir in the shredded cheddar cheese.
Step 4: Combine and Bake
Gently add the sautéed vegetables to the egg mixture and stir to combine.
Pour the entire mixture back into the cast iron pan (no need to wash it!).
Pop it into the preheated oven and bake for 15-17 minutes, or until the frittata is puffed up and golden.
Step 5: Serve and Enjoy
Once out of the oven, serve immediately while it’s warm and fluffy. This dish pairs beautifully with our fresh sourdough bread.
